Greek Spanakopita!

The filling is wrapped or layered in phyllo (filo) pastry with butter and/or olive oil, either in a large pan from which individual servings are cut, or rolled into individual triangular servings ... Spanakopita is golden in color when baked, the color often enhanced by butter and egg yolk.
Spanakopita! ( Greek Spinach Pie) There are a couple of interesting ways to make this wonderful meal or side dish. First you can make it like Tiropites into triangles or secondly as a pie or in a casserole. Basic Ingredients: 4 eggs 10 full sheets of filo pastry 14 ounces of feta 1 cup chopped parsley 1 1/2 cups onion 1/2 cup crushed garlic 1 cup chopped dill salt, pepper, garlic powder to taste olive oil and butter 1 1/2 cups thinly sliced Leeks 33 ounces of baby spinach 1/2 cups sliced green onions 12x 8" pan Bake at 375 degrees F. for about 40 minutes or more



sauté all the onions in a combination of olive oil and butter	until the onions become translucent



chop dill	chop parsley



for a little fun... adding olive oil from Sparta!	'wilting' the baby spinach takes time as only so much can be added to even a large pan until it shrinks enough to add more

adding dill! Can you have too much dill... nope!	adding the eggs!



crumble into the bowl 14 ounces of Greek feta cheese!	you can cover and save to cook later! Bake at 375 degrees F. for about 40 minutes or more


	Once baked, the Spanacopita makes a wonderful side dish or a meal in and of itself! OPA!
