Building a Better Tuna Casserole!

 


Laura proposed an unusual challenge for me...
to try to make a better tuna casserole.  Hmmmmmmm
 The problem was that I was working with a big handicap...
I don't like Tuna!  Actually, working with a bit of Armagnac and wine,
adding crab, eggs and cheese I think I toned down the 'fishiness'
a notch or two and creating something very satisfying.
 

Tuna Casserole

 

2lbs. albacore
1 lb crab
1/2 lb. Bacon
7 sliced hard boiled eggs

 1 lb linguini pasta

1 lb. mushrooms
1 box peas

Sauce:

 Mirepoix (plus!):

1/4 cup crushed garlic
2 bell peppers (Red/Green)
1 jar pimento
1 Onion
1 cup celery
1 cup diced carrots (1 cm)
olive oil

1 cup sherry
1/2 cup Armagnac
1 tablespoon lemon juice
chicken broth (as needed)

Flour (corn starch) as needed
2-3 cups heavy whipping cream
3 tbsp butter

Seasonings:
salt, pepper and garlic powder
1 tsp dill
1/4 tsp thyme
1/4 tsp ginger



(a little of Capt'n Rog Secret Mixture)

(note: use only 1-3 teaspoon of the mixture below)

3/8 teaspoon Cayenne Pepper
1/4 teaspoon Paprika
1/4 teaspoon Black Pepper
1 teaspoon sea Salt or to taste
1/8 teaspoon Allspice
1/8 teaspoon Cardamom
1/8 teaspoon Cinnamon
1/8 teaspoon Clove
1/8 teaspoon Ginger
1/8 teaspoon Mace
1/8 teaspoon Mustard
1/8 teaspoon Nutmeg

 

Toppings:
Bread crumbs
Slivered almonds
Cheeses ( mozzarella, cheddar and others)

 

   

Sauteeing the various meats and...
 then bringing them together after
 completely working the tuna with
brandy and wine until the tuna
smell and taste reduces

 


Finding the right pasta is fun...
especially if it brings something
fun to the party like color or
an unusual taste
Aaaahhh... a special Mirepoix!
 
Adding the last of the ingredients to the seafood and reux!

right out of the oven!

350 degrees for 30 minutes

stands up on its own and the taste is surprising!
   

Although I am not a fan of Tuna... I found this recipe to be an
 interesting challenge , fun to make and wonderful to enjoy!
