Pumpkin Cake or Cupcake recipe!

Like most heavy cake recipes, baking is a time consuming proposition over lower heat. In the case
 of this Pumpkin Bundt Cake , you are looking at around 1 1/2 hours... otherwise it will not be fully baked.
Although the batter is delicious, we want it baked!

There is another alternative to baking a cake and it is wonderfully received... and that is making frosted
Pumpkin cupcakes! It takes a lot less time and little chance for error.

Here is the basic recipe for the cake:

3 cups flour
4 heaping teaspoons of my spice blend or any pumpkin spice blend
1 cup cream
1 cup butter
2 teaspoons baking soda
2 teaspoons baking powder
1 can of Pumpkin Puree
5 eggs
1/2 cups sugar
1/2 teaspoon salt
1/4 cup pecan meal
1/2 cup white raisins
1/2 cup mini chocolate chips
1 teaspoon vanilla

bake 350 degrees for about 1 1/2 hours

 

 

Moist and delicious!
