Mama Mia Meatsa Lasagna!

Making a Lasagna is really a very simple thing to do... unless you want to
 do something "extra"! As with any Italian cuisine, the key is in the sauces...
Make a great sauce and all may be forgiven. So, before you rush out and
 buy a 'bottled sauce' from
Mssr. Chef Boyardee,
why not try and make it yourself?

This is no vegetarian dish!

The assortment of pork sausage, ground beef and Andouille Sausage makes
 this plentiful & special! Add to this mushrooms, olives and our special 'cheese blend'
of Ricotta, Parmesan, Romano & eggs all flavored with salt, pepper, garlic &
dill and you have our lip smacking recipe for family bliss!

A Big key is the assembly of any lasagna. This is fairly straightforward: first a
noodle layer, then a layer of prepared Marinara sauce, followed by a meat layer
 and then a cheese mixture layer and finally capped with a layer of
shredded Mozzarella and a dash of Romano and Parmesan.


Andouille Sausage smells so wonderful!


Lasagna noodle sheets make for
an interesting variation
Cooking the 3 lbs. pork sausage flavored with
 sage, salt, pepper, oregano, rosemary

Browning the 1 lb. beef ...and whisking
a few eggs for the cheese mixture!
Bring on the Cheese!

6 eggs
 2 lb. Ricotta
1/2 cup Parmesan
1/2 cup Romano

Salt, Pepper, Garlic Powder

fresh herbs: parsley &/or dill


Like a little chunkiness to the
sauce?... add a can of diced
tomatoes while browning the
 beef to include in the sauce!
a few dollops of sour cream will add a
nice smoothness to the texture of the
don't start tasting it now...
or there won't be any left!
sheets of Lasagna!
cheese mixture, sliced olives,
mushrooms, crumbled sage sausage,
sliced and fried Andouille sausage


adding the first layer of sauce over
the noodles
sprinkle the sausages & veggies,
cover with the cheese mixture!
cover with sliced Mozzarella



the first slice to the last... is wonderful!


Add the second layer: sauce, sausage &
veggies, cheese mixture... then Mozarrella!
