SECRET: The best mirepoix contains many things known and unknown... what is known is : onions, bell pepper, carrots, celery, garlic... then there are the secrets! (Armagnac)

Getting the sauce right...
I wanted a bisque-like sauce & NOT
a tomato based sauce.

SECRET: add an 'extra' 4 cans
of crab and 1 can of 3 lb. plus can of
clams in juice!
 


Clockwise from the top: Andouille sausage, crab meat, Mirepoix, bacon, scallops, lobster tails and shrimp (center)... all sautéed previously and the juices retained for the sauce

SECRET:

"I stop at this point to mention that although some folks feel that sailing
into an endless sea of cheese is heaven, I would argue that too often an
 abundance of cheese is used to hide a poorly conceived recipe... and
cheaper ingredients. Mozzarella is a fine cheese... but to be used
sparingly to bind the lasagna.... and add a nice finish"
