SECRET:
The best mirepoix contains many things known and unknown...
what is known is : onions, bell pepper, carrots,
celery, garlic... then there are the secrets!

Getting the sauce right...
I wanted a bisque-like sauce & NOT
a tomato based sauce.
SECRET:
add an 'extra' 4 cans
of crab and 1 can of 3 lb. plus
can of
clams in juice!

Clockwise from the top: Andouille sausage, crab meat,
Mirepoix, bacon, scallops, lobster tails and shrimp
(center)... all sautéed previously and the juices
retained for the sauce

"I stop at this point to mention that although some
folks feel that sailing
into an endless sea of cheese is heaven, I would argue
that too often an
abundance of cheese is used to hide a poorly conceived recipe... and
cheaper ingredients. Mozzarella is a fine cheese... but
to be used
sparingly to bind the lasagna.... and add a nice finish"
