Alfredo!

I have learned in my older age that finding foods that make the women in my life smile.
After all, my dishes for myself tend to be more protein heavy and theirs are filled with
 carbohydrates and lovely fats. I think it is the way we are made. In any event, cheese,
pasta and butter seem to be the three basic ingredients needed to make any woman
 happy... and by a happy coincidence, they also are the three primary ingredients in
Fettuccini Alfredo!

The story of Fettuccini Alfredo goes back to the first decade of the 1900's. The story goes
 that a young husband wanting to find something his pregnant wife might wish to eat, ran
to the kitchen and mixed up a batch of butter and Parmigiano cheese in a skillet and
poured the delightful mixture over egg noodles... that is how Fettuccini Alfredo was born.

Now detractors will say it is as old as Roma itself.... but no one can deny that Alfredo's
popularized the dish and like Hydrox that invented the chocolate wafer cookie... it is
Oreo that we all remember.

So here is my version of Scallops with Alfredo Sauce!

Meats:

1 1/2 lbs of Scallops
1/2 lb shrimp
 

Sauce:

12 oz. of grated Parmesan, Asiago and Romano ( I end up using extra Romano)
1 cup heavy cream ( or as needed)
1/4 lb butter

Spices:

1/2 tsp Sea Salt ( check the saltiness of your seafood and adjust)
1/2 tsp white pepper
1 heaping tablespoon of chives
1/2 tsp Savory
1/4 tsp nutmeg

Vegetables:

1 white onion
2 tablespoons crushed garlic
1/2 lb sliced mushrooms

Noodles:

1/2 lb. egg noodles

 

   
   

I like my seafood to be slightly sweet 
and I find soaking them in sherry, corn
 whisky (Bourban) and a few other things
 to really help  to bring out the sweetness
and reduce... the fishiness.
 

Just a small technique from my grandmother
 on what she called "self-dicing" the onions
   
   
Sea salt into the water for the noodles
 
racking the noodles and pouring over
 an ample amount of butter to keep them
 from sticking
 
   
   
Ah... the 'secret' ingredient in my sautéing
the veggies is an equal portion of left
over bacon fat and butter

 
Grating the cheese
   
   
Adding the spices to the heavy cream,
butter and cheese mixture on a low flame

 

In another pan, adding mushrooms to the
garlic and onion mixture to cook down a bit
   
   
Finally add the shrimp to the onions, garlic and mushrroms Assemble your dinner thus" first place the noodles, the add the veggies followed by the scallops and top it all with your Alfredo Sauce!
